MIni brownies

DELICIOUS

These were amazing
I used regular Hershey's brownie mix
I got this little brownie silicone pan at michaels
It bakes 24 cupcakes
These were great I'm going to use the pan again for sure!!!

Lemon Cream Cupcakes

This recipe was so delicious I made it twice.  The cupcakes were amazing with just the right amount of Lemon.  I found the recipe at Allrecipes.com.  The recipe was great except in my oven the cooking time was a little less. I made mini cupcakes to share with all of my neighbors and friends.  Can't wait to make these a third time in the future.
Here is the recipe it's for sure worth a try- this makes 30 big cupcakes

Ingredients

  • 1 cup butter or margarine, softened
  • 2 cups sugar
  • 3 eggs
  • 2 teaspoons grated lemon peel
  • 1 teaspoon vanilla extract
  • 3 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups sour cream
  • FROSTING:
  • 3 tablespoons butter or margarine, softened
  • 2 1/4 cups confectioners' sugar
  • 2 tablespoons lemon juice
  • 3/4 teaspoon vanilla extract
  • 1/4 teaspoon grated lemon peel
  • 1 tablespoon milk

Directions

  1. In a mixing bowl, cream butter and sugar. Beat in eggs, one at a time. Add lemon peel and vanilla; mix well. Combine dry ingredients; add to creamed mixture alternately with sour cream (batter will be thick). Fill greased or paper-lined muffin cups with 1/4 cup of batter. Bake at 350 degrees F for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes; remove to wire racks to cool completely. For frosting, cream butter and sugar in a small mixing bowl. Add lemon juice, vanilla, lemon peel and milk; beat until smooth. Frost cupcakes.

Triple chocolate cupcake recipe

This weekend I tried baking triple chocolate cupcakes for my friend
They tasted fabulous!!! If i made them again I would spend more time on the frosting to make sure it is the way I like. My family will eat anything but I try to make them the best I can!!
Here is the recipe it's worth a try-
FOR THE CUPCAKES:
2/3 cup butter
1 3/4 cup brown sugar
3 eggs
1/4 cup sour cream
1 cup milk
1 1/4 cup cocoa powder
1 1/4 cup flour
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt

FOR THE DARK FUDGE FILLING:
1 1/2 cups dark chocolate chips
1 cup heavy whipping cream
1 teaspoon vanilla

FOR THE WHITE CHOCOLATE FROSTING:
1 cup white chocolate chips
2 sticks butter, softened
6 pounds powdered sugar
1 tablespoon vanilla
2-4 tablespoons milk
fresh ground sea salt

directions:
FOR THE CUPCAKES:
In a stand mixer, beat together the butter, brown sugar and eggs until light and fluffy. Add the sour cream and milk and beat until combined. Add the remaining ingredients, then beat together just until all ingredients are moistened. Be careful to not overbeat the batter.

Spoon into a muffin tin lined with 24 cupcake wrappers. Bake in an oven preheated to 350 degrees for 17-19 minutes, or JUST until the cupcakes spring back to the touch. Remove and cool completely, then use a small ice cream scoop to remove the center portion of each cupcake. Fill with dark chocolate filling, then frost with white chocolate frosting. Sprinkle with sea salt and chocolate sprinkles to finish.

FOR THE FILLING:
In a medium, microwave-safe bowl, heat together the chocolate chips, cream, and vanilla. Whisk together until smooth. Spoon into the center of cooled cupcakes.

FOR THE FROSTING:
In a small microwave-safe bowl, melt the white chocolate chips just until smooth (zap for about 60 seconds, then stir until smooth. If the chips aren't melted entirely, return to the microwave for an additional 20 seconds, then stir again. This will ensure the chocolate melts, but doesn't burn).

Use a spatula to spoon the melted chips into an electric stand mixer. Add the butter and beat together until smooth and creamy. Slowly add powdered sugar and vanilla to the mix, then add just enough milk to make the frosting soft, but not runny. Frost cupcakes, sprinkle with sea salt and chocolate sprinkles for decoration and amazing flavor! Enjoy!
